Family-Friendly Chicken Fajitas

Ingredients

  • 2–3 large chicken breasts, cut into tenderloin strips

  • 1 red onion, thinly sliced

  • 1 red capsicum, sliced

  • 1 yellow capsicum, sliced

  • 1 green capsicum, sliced

  • 2 Tbsp olive oil

  • ½ tsp chilli powder (adjust to taste)

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp salt

  • Cracked black pepper, to taste

  • Juice of 1 1/2 fresh limes

To serve:

  • Tortillas

  • Fresh tomato & cucumber, diced

  • Fresh coriander, chopped

  • Sour cream or chipotle lime cream (see below)

Method

  1. Preheat oven to 220°C.

  2. Place sliced onion, capsicum, and chicken strips in a large ovenproof dish or tray.

  3. Drizzle with olive oil and sprinkle over all spices, salt, and pepper. Toss well to coat evenly.

  4. Bake for 20 minutes. Switch to grill for 2–3 minutes at the end for extra colour on the veg.

  5. Remove from oven and immediately squeeze over fresh lime juice.

  6. Serve in tortillas with your favourite toppings.

Chipotle & Lime Cream

Mix together:

  • 2 Tbsp sour cream

  • 2 tsp mayonnaise

  • 1 tsp chipotle chillies in adobo sauce

  • Juice of ½ lime

Drizzle over your fajitas for a creamy, smoky kick!

Storage & Leftovers

  • Store cooked chicken and veg in the fridge for up to 2 days.

  • Great cold in wraps for next-day lunchboxes (for older kids)

Mum and Dad can heave the real deal, and if need be, the little ones can enjoy their mild fajitas without the kick.
