Choc Protein Crunch Slice

Choc Protein Crunch Slice

Prep Time: 15 mins
Chill Time: 20 mins
Makes: 24 slices

Ingredients

  • 2 cups soy protein crisps

  • ½ cup chocolate protein powder (whey)

  • 1 cup natural crunchy peanut butter (we love Mayver’s)

  • ⅓ cup honey

  • 225 g chocolate melts

  • 1 Tbsp coconut oil

  • Sea salt flakes (for topping)

Method

1. Prepare base:

  • In a large bowl, combine soy crisps, protein powder, peanut butter, and honey.

  • Microwave for 45 seconds, then stir until well mixed.

  • Press mixture into a lined slice tin. Place in freezer while you prepare topping.

2. Chocolate topping:

  • In a microwave-safe jug or bowl, add chocolate melts and coconut oil.

  • Microwave on half power for ~3 minutes, checking halfway to avoid overheating.

  • Stir until smooth and melted.

3. Assemble:

  • Pour chocolate topping over the base.

  • Chill in the fridge for 2–3 minutes until slightly set. Sprinkle sea salt flakes over the top.

  • Return to fridge for 15–20 minutes, then slice into 24 pieces.

Note: Don’t leave it too long before slicing, or the chocolate may crack.

Tips & Storage

  • Store in an airtight container in the fridge for up to a week (if they last that long!)

  • Can also be frozen (slice first, then layer with baking paper).

  • For younger kids, you can swap the protein powder for cocoa powder if you’d prefer a lighter version.
